Tony Pizzolato opened a small produce stand in Baton Rouge in 1959. It was a modest operation. But Louisianans love their seafood, and Tony noticed: crawfish, shrimp, and crabs outsold everything else he carried. He leaned in. By 1972, lines were forming out the door — not just for the seafood, but for the food itself, made from Tony's own Cajun recipes, including his seasoned fish fry mix.
The national expansion felt obvious. If Baton Rouge couldn't get enough of it, why would the rest of the country be any different? Louisiana Fish Fry Products launched in 1982 to answer that question. What started with fry mixes grew steadily: Jambalaya and Étouffée base mixes, seafood boil, sauces, gravy mixes, and a full line of Cajun-inspired products.
The company never left home. Their plant and headquarters are still in Baton Rouge, Louisiana — right where they started. They describe themselves as "proudly US-owned and US-made," and there's no record of acquisition by a larger food conglomerate. For a brand with nationwide retail distribution and a partnership with food personalities, that independence is worth noting.
