Wholly Fire Foods came out of a vegetable garden in Hattiesburg, Mississippi, during the spring of 2020. James Louis and his wife Doris had been growing peppers and produce at home — like half the country during lockdown — and found themselves with more than they could eat. James started experimenting with hot sauce recipes, originally just looking for a way to cut back on salt without giving up flavor.

That first batch wasn't meant for anyone but the two of them. Doris served as the taste tester, dialing in the heat and the balance. When James felt the recipe was right, he made a bigger batch and walked it door-to-door through his neighborhood. He sold out on the first day.

The concept behind Wholly Fire is specific and personal: low-sodium hot sauces made from natural ingredients with no artificial preservatives. That low-sodium angle isn't a marketing hook — it's why the sauces exist. James and Doris created them because they needed a condiment that delivered heat and flavor without the salt load of commercial brands. Each recipe reflects that origin, keeping sodium down while letting the peppers and supporting ingredients carry the taste.

Growth came fast. Wholly Fire Foods expanded from neighborhood sales into local stores, then regional distribution. The company won the SBA's Mississippi 2024 Minority Small Business of the Year award, and their sauces have reached retail shelves in chain grocery stores across the Southeast. James still creates every recipe and oversees production. Doris still tastes.

Production uses a small-batch specialty food packing facility in Alabama, which handles labeling and regulatory compliance while Wholly Fire maintains control over recipes and ingredients.
