The farm began as a conventional 20-acre confinement hog operation but underwent a radical transformation following a family health crisis in the late 1990s that led the Hitzfields to question industrial farming practices. Today, Seven Sons partners with over 150 like-minded farms practicing regenerative agriculture across 20,000+ acres, delivering 100% grass-fed beef, pasture-raised pork, chicken, lamb, and bison to thousands of families nationwide.

The farm operates with complete transparency and an "open door" policy for public visits. The Hitzfield family personally oversees operations, with ownership transitioning from Lee and Beth to their sons and daughters-in-law.
